·4 boneless skinless chicken breasts
·1 cup thinly sliced potatoes
·1 cup oyster mushrooms, sliced
·1 tablespoon minced garlic
·1 teaspoon dried Italian seasoning
·1 cup heavy cream
·Salt and pepper, to taste

Grease a large pan and season chicken with salt and pepper. Add chicken to pan and cook over medium heat for 5-6 minutes on each side, or until browned and cooked through. Transfer to a plate and cover. Add potatoes, garlic, and herbs to pan. Cook for 5-7 minutes, or until potatoes are easily pierced browned on the edges. Add mushrooms and heavy cream, then cook another 4-5 minutes, or until hot and thickened throughout, stirring occasionally. Season to taste. Add chicken to pan and evenly coat in the cream sauce. Garnish with fresh herbs if desired, then serve.
