Kale Pizza Crust

Ingredients

·3 and ¾ cup kale, trimmed and washed
·2 eggs
·2/3 cup gluten free panko breadcrumbs
·1 cup grated cheese of choice
·Salt and black pepper, to taste
·Pizza sauce of choice
·Pizza topping of choice

Directions

Preheat oven to 350°F. In a food processor with the S blade attachment, add the raw kale, eggs, cheese, breadcrumbs, salt and pepper. Process until it forms a sticky pizza dough. Place the kale pizza dough onto a baking tray covered with baking paper. With your hands, press the ball to flatten and extend the dough with your fingers until crust is approximately 0.4 mm thick and 8 inches in diameter. If sticky, slightly oil your hands with olive oil. Bake in the oven for 15-20 minutes, or until kale crust is firm and starts to get golden brown on the edges. Remove from oven, add pizza sauce and toppings. Return to the oven until toppings are cooked and cheese is melted. Slice, serve, and enjoy!
