Cauliflower and Broccoli with Mustard Vinaigrette

Ingredients

3 c cauliflower florets
3 c broccoli florets
2 T olive oil
¼ c chopped spring onions
2 T red wine vinegar
2 T dijon mustard
salt and pepper

Directions

Steam cauliflower and broccoli until just tender, about 5 minutes and drain. Heat oil and add spring onions, saute for about 2 minutes and remove from heat. Add the vinegar and mustard and combine well. Drizzle over steamed veg.
